Preheat the oven to 400° F.
Put all cut veggies and chicken strips on sheet pan.
Mix the rest of the ingredients in a bowl.
Pour over veggies/chicken.
Toss everything together until evenly coated.
Bake for 12-15 minutes until the vegetables are soft and chicken is cooked through.
Serve with rice, quinoa, or pasta.
Top with Parmesan cheese (optional)
