Combine first 7 ingredients and bake, covered, at 400° for one hour.
Cook pasta according to directions when there is about 10 minutes remaining on the bake time.
When bake time is up, remove casserole add ½ cup coconut milk, and one handful of fresh parsley. Stirred to combine.
Add cooked pasta into sauce mix, with up to ½ cup of the pasta water.
Top with Parmesan, if desired.
