Dump-and-Bake Hidden Protein Pasta
  1. Position an oven rack 3 to 4 inches from the broiler and preheat the oven to 400°F. Lightly coat a 9 × 13-inch baking dish with oil and set aside.

  2. In a food processor or blender, combine the cottage cheese, marinara sauce, broth, basil, oregano, garlic powder, salt, and black pepper and process on high speed until completely smooth.

  3. Pour the blended mixture into the baking dish. Add the penne and spinach and mix until the penne is submerged in the sauce. Cover the baking dish with aluminum foil.

  4. Bake until the pasta is al dente, about 30 to 40 minutes, stirring halfway through.

  5. Turn the oven to high broil. Remove the foil and sprinkle the mozzarella over the top of the penne. Broil until the cheese is golden and bubbling, about 5 minutes, taking care not to burn the cheese.

  6. Let rest for at least 10 minutes to continue allowing liquid to absorb, and up to 30 minutes for best results. Evenly divide among four bowls.
