Greek Kofta Kebabs
  1. Combine all ingredients except ground beef in a bowl. Once combined, add ground beef & mix with hands only until seasonings are mixed into beef. Cover with plastic wrap & put in fridge for 1 hour.

  2. Divide mixture into 5 portions, or about 100g each. Make logs & thread onto skewers or form meat around skewers. Form tightly, evenly & somewhat thinly - you don't want the outside to burn before the inside is cooked through.

  3. Heat 1 tbsp oil in a large non-stick pan over medium-high heat.

  4. Cook the koftas untouched for about 4 minutes, do not attempt to flip over until they release from the pan. Flip & cook other side for about 3 minutes. Briefly cook both smaller sides to brown, if desired.

  5. Transfer to a plate lined with paper towel & blot off excess oil.

  6. To serve, pile the koftas on a platter with greek salad, feta, tzatziki, hummus, basmati rice & warmed, fresh pita bread on side.
