Remove the skin and dice the sweet potatoes. Add to a large bowl, drizzle in some olive oil and season with the list of seasonings above. Mix to combine. Place in the oven at 400 degrees for ~45-55 minutes or until soft on the inside and crispy on the outside.
Prepare all of your toppings and set aside.
Add the ground beef to a large greased skillet over medium-high heat. Break it up then season it with the list of seasonings above. Let cook for 6-8 minutes. Mix every few minutes until done to your liking.
