Preheat the Blackstone griddle or a large skillet over medium-high heat. Drizzle in 1 tablespoon of oil.
Sauté the sliced Yukon gold potatoes in the pan, seasoning with garlic powder, onion powder, smoked paprika, black pepper, and salt. Cook for about 10-12 minutes until tender and golden brown.
Push aside the potatoes and add another tablespoon of oil, followed by the sliced sausage. Brown for about 5 minutes until crispy and golden.
Combine chopped onion and bell pepper with the sausage, followed by the zucchini. Cook for an additional 5-7 minutes until veggies are tender yet still crisp.
Taste and adjust the seasoning, then remove from heat and serve. Garnish with fresh parsley if desired.
Optional: Drizzle with a bit of hot sauce for an extra kick.
