Bolognese With Ricotta Gnocchi
  1. Process onion, celery, carrots, garlic, and mushrooms in a food processor to make a vegetable paste.

  2. Brown the beef and spicy Italian sausage.

  3. Add the vegetable paste to the browned meat and cook until the juice is released and evaporated.

  4. Add tomato paste, chili flakes, bay leaves, and red wine, and cook for a bit.

  5. Add hand crushed tomatoes, beef stock, Parmesan rind, and thyme.

  6. Cook the sauce covered for half the time and then uncovered for the remaining time.

  7. Make ricotta gnocchi by mixing ricotta, eggs, salt, pecorino, and flour, then roll into logs and cut into pillows.

  8. Boil the gnocchi until they float, then serve with the Bolognese sauce.
