Add chicken thigh fillets and cook until browned
Add garlic, onion, and fresh chilli, stir-fry until fragrant
Add red and green peppers, continue stir-frying
Pour in chicken stock, oyster sauce, dark soy sauce, rice vinegar, and honey
Season generously with ground black pepper
Simmer until chicken is cooked through and sauce thickens
Garnish with spring onion
Serve over cooked rice
