Courgette Gratin
  1. Cook the zucchini in a large sauce pan with butter until soft, but not browned.

  2. Puree with stick blender until smooth.

  3. In a small bowl, beat together the eggs, cream, salt and pepper.

  4. Combine and spread in a buttered casserole dish, then top with the cheese.

  5. Bake in the oven for 20 to 30 minutes until creamy, golden, and bubbling.
