Avocado Mousse
  1. Slice the avocado in half and remove the pit. Scoop the flesh into a a blender or food processor and puree avocado until smooth.

  2. Add cocoa powder, honey, vanilla, espresso powder, and salt, and blend until completely mixed and no lumps remain.

  3. Scoop into dishes and serve immediately, or chill until ready.
