Preheat the oven to 190°C (375°F)
Line a baking tray with parchment paper or lightly grease a muffin tin
Heat olive oil in a pan
Add garlic and sauté for about 30 seconds
Add the spinach and cook until wilted (2–3 minutes)
Let it cool slightly, then squeeze out excess moisture
In a large bowl, combine cooked spinach, feta cheese, mozzarella, Parmesan cheese, eggs, almond flour or breadcrumbs, oregano, chili flakes, salt and pepper
Mix well until it forms a firm mixture
Scoop spoonfuls of the mixture onto the baking tray or fill a muffin tin for evenly shaped, round bites
Lightly press them down so they hold together
Bake for 20–25 minutes until golden brown and crispy on the edges
Let them cool for 5 minutes before serving
