  1. Thinly slice 2 tomatoes (washed & patted dry) into slices that are ⅛ inch (.3175 cm) thick, then place them in a single layer, season with sea salt & black pepper just on one side and let them sit for 5 minutes

  2. Meanwhile make the dressing, add 2 tbsp extra virgin olive oil into a small bowl, along with ½ tbsp sherry vinegar, finely grate 1 clove of garlic, add in 1 tsp dried oregano and lightly season with sea salt & black pepper, whisk together until well mixed

  3. After 5 minutes, transfer the slices of tomato into a serving dish, making sure to shake off any excess water from them, drizzle the dressing over the tomatoes and sprinkle with finely chopped parsley, enjoy!
