First, make the sauce. Whisk together all of the sauce ingredients. Taste and adjust as needed and set aside.
Next, prepare the noodles. Add them to a large bowl and cover with boiling water. Let them sit for five minutes, then drain and set aside.
Last, in a large skillet over medium heat, add the sesame oil. Once the pan is hot, add the ground chicken and cook until browned, breaking it up into tiny pieces.
Add in the garlic, ginger and Chinese 5 spice. Stir for 2 to 3 minutes, then add in the shredded cabbage and carrots and let cook down for 4-5 minutes.
Finally, add in the sauce, noodles, bean sprouts and noodles, stirring until everything is coated well.
Reduce heat to low and let cook for 2 to 3 minutes. Remove from heat, taste, and add the salt and pepper.
Plate, garnish with chopped cilantro and lime wedges to squeeze on top. ENJOY!
