Heat ghee or oil in a kadhai. Fry the paneer on low to medium heat until crisp and lightly golden. Remove and set aside.
In the same pan, add cumin seeds, cloves, and green cardamom. Sauté for a few seconds until aromatic.
Add the minced garlic and sauté until slightly golden. Then add the sliced onion and slit green chilies. Cook until the onions turn light brown.
Add salt, turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and black pepper powder. Mix well.
Add the sliced ginger and cook for a minute.
Add the sliced bell peppers, stir well, cover, and cook for 1-2 minutes or until slightly tender but still crunchy.
Add the fried paneer and cook for another minute.
Garnish with chopped coriander and enjoy..!
