Baked Parmesan Panko Delicata Squash Rings
  1. Preheat oven to 400F.

  2. Cover a sheet pan with parchment, spray parchment with non stick spray and set aside.

  3. Cut the squash in ½" rounds (no need to peel the squash. The skin is very thin and totally edible. Scoop out the seeds.

  4. Create a dredging station.

  5. First bowl is filled with flour and all the seasonings.

  6. Second bowl is filled with beaten eggs.

  7. Third bowl is Panko, Parmesan, pinch of salt and thyme.

  8. Dip the rings in flour first, then eggs and then the Panko mixture.

  9. Place on pan.

  10. Drizzle with olive oil.

  11. Bake for 15 minutes, flip and then bake for 10 more or until golden and crispy.

  12. Serve with marinara and more Parmesan
