Crisp the Meat: In a large skillet, cook the pancetta over medium-high heat until crispy. Remove the pancetta, leaving the fat in the pan.
Sauté Onion: Add the finely diced red onion to the pan with the fat and sauté until soft and slightly caramelized.
Prepare Sauce: Lower heat. Add the heavy cream, Parmigiano-Reggiano, and the crispy pancetta back in. Stir until the cheese is melted and the sauce is smooth.
Cook Gnocchi: Meanwhile, boil the gnocchi in salted water. Once they float (about 1-2 minutes), remove them and directly add them to the sauce.
Assemble ("Angels and Demons"): Toss the gnocchi in the cream sauce. Remove from heat and dollop the cold stracciatella or burrata (the "Angel") over the top. Drizzle generously with the spicy Calabrian chili paste or oil (the "Demon").
Garnish: Top with fresh parsley and serve immediately.
