Soft Amaretti Cookies
Ingredients:
2 cups almond flour
2 large egg whites
1 teaspoon almond extract
¼ teaspoon salt
1 cup powdered sugar
¼ teaspoon vanilla extract
Extra powdered sugar for dusting
Directions:
Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine almond flour and powdered sugar.
In a separate bowl, whisk egg whites until soft peaks form.
Gently fold the egg whites into the almond mixture, adding almond extract, vanilla extract, and salt.
Using a tablespoon or cookie scoop, drop mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Dust the tops with powdered sugar.
Bake for 15-18 minutes, or until the edges are set and the tops are slightly cracked.
Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
