Mix all the sauce ingredients in a small bowl or jar
Blanch the Hu Tieu noodles quickly in boiling water, rinse under cold water, drizzle with oil, and toss to coat
In a hot pan, fry garlic and onion until fragrant
Add pork and stir fry until just cooked. Add bean sprouts and cook until fragrant
Pour in the sauce and simmer for a couple of minutes until sticky
Turn off the heat, add noodles, and toss until glossy and evenly coated
Add garlic chives and tung ho, toss through, and serve
Garnish with fried garlic, shallots, and your choice of toppings and enjoy
