Sourdough Danish Cardamom Brioche “hveder”
  1. Mix together the flour, sugar, milk powder, water, eggs, and starter. Let everything come together, then turn off the mixer and let it rest for 30 minutes.

  2. Add the salt and yeast, and knead until the dough is smooth and elastic.

  3. Add the butter a little at a time and make sure it’s fully incorporated. Do the same with the neutral oil.

  4. Crush the cardamom and add it at this stage.

  5. Let the dough rise at room temperature until it doubles in size, then place it in the refrigerator overnight.

  6. In the morning, divide them into 80-gram portions, shape them into balls, and let them rise in a warm place until they double in size.

  7. Preheat the oven to 165 degrees (330°F).

  8. Brush them with beaten egg, let them dry, then brush them with the remaining egg.

  9. Bake them in the oven until they reach the desired color and an internal temperature of 96°C (205°F).

  10. Serve warm with butter.
