Preheat oven to 200C, line a small baking tray with baking paper. Add the leek to the tray and drizzle over olive oil, salt and pepper. Roast for 15 - 20 minutes or until super golden brown.
Cook pasta to packet instructions, drain and leave aside.
Once the leek and pasta is cooked, add all the ingredients to a large mixing bowl and combine. Season with extra salt and pepper as needed
