Open the can of salmon and drain it.
In a bowl, combine the salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, and chopped onions. Season with salt and pepper.
Shape the mixture into patties about the size of your palm.
Heat oil in a skillet over medium heat and fry the patties until golden brown on both sides, about 3-4 minutes per side.
Serve hot with a side of lemon wedges or your favorite dipping sauce.
