Cook pasta according to package directions; drain and set aside
In a saucepan, melt butter over medium heat. Stir in flour to make a roux and cook for 1 minute
Slowly whisk in milk and cream until smooth. Cook 2-3 minutes until slightly thickened
Add cheeses, stirring until melted and smooth
Season with salt and pepper
Stir in cooked pasta. If you want that CFA slightly browned top, sprinkles extra cheddar on top and broil it for 2-3 minutes until golden
