Put sugar and honey in a small saucepan and melt to combine over moderate heat
Remove from heat and add melted chocolate
Add flour, spices, cocoa, dried fruit and salt to a mixing bowl
Add melted chocolate mix to the bowl
Add nuts and use a large metal spoon to mix everything together quickly
Line a 22cm springform tin with greaseproof paper
Using wet hands, press the mixture into the tin, flattening and smoothing until even
Push any dried fruit beneath the surface so they don't catch
Cook in oven at 160°C (140°C fan) for around 35 minutes until slightly puffed on top and firm to touch
Remove from oven and dust over with icing sugar
Allow to cool and firm up completely before slicing
