Breakfast Stew Greens
  1. Brown smoked turkey in olive oil for 4–5 minutes.

  2. Add onion and shallot and cook until softened.

  3. Stir in garlic, ginger, and seasonings.

  4. Add collards and enough broth to fully cover greens.

  5. Bring to a boil, then simmer partially covered for 1½–2 hours, adding more broth as it reduces.

  6. Add bok choy and simmer 20–25 minutes more.

  7. Stir in baby kale and spinach and cook until silky.

  8. Shred a little smoked turkey back into the pot and serve with optional jammy eggs, lemon juice, black pepper, or chili crisp.
