Garlic Aioli

    Instructions:

  1. Mince garlic finely, then mash into a paste with a pinch of salt using the flat of your knife — or use a microplane grater for extra-smooth texture.

  2. In a small bowl, whisk together mayo, lemon juice, garlic, mustard, and optional olive oil.

  3. Taste and adjust salt, lemon, or garlic. For a smoky note, add a pinch of smoked paprika.

  4. Chill 15–30 minutes before serving — flavors intensify!
