EREWHON BROWNIE DUPE
Brownie ingredients
1 can (15 oz) organic peas, black or normal chickpeas, drained and rinsed (in their ingreients list it says organic peas but chickpeas seemed to work)
70g organic coconut flour
50g organic cacao powder
130g maple syrup
75g coconut oil, melted
120g coconut or almond milk
1 tsp organic baking soda
80g sugar-free chocolate chips
Icing
200g dairy free yoghurt
50g (ish) cocoa powder
Maple syrup to taste
Preheat oven to 175°C and grease a baking pan
In a food processor (would reccomend this over a blender as i found it very challenging in a blender!) combine chickpeas, coconut flour, cacao powder, maple syrup, melted coconut oil, coconut milk, and baking soda. Blend until smooth.
Fold in the organic sugar-free chocolate chips into the batter.
Place the batter into the prepared baking pan and spread it evenly. It might feel like there’s not enough liquid in it but trust the process.
Bake in the preheated oven for 30-40 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool completely before cutting into squares.
Once cooled, mix together icing ingredients add the icing on top, along with some extra choc chips for decorations
Store in the fridge for at least 1 hour and serve - do not skip this step! Otherwise the texture will be weird. MUST BE STORED IN THE FRIDGE
