Kung Pao Chicken

Ingredients

    Marinade

  1. Cut Chicken into approximately ½ inch pieces

  2. Mix the Marinade with all the ingredients, and place cut chicken to marinate for at least 20 minutes

  3. Drain the chicken and fry in a little oil until just cooked

  4. Mix the soy sauce, Shaoxing wine, salt, sugar, water and black vinegar from the ingredients in a bowl

  5. In a frying pan over medium-high heat, heat a little oil and brown the chopped garlic, half the scallion, and the dried chiles. Add the chicken and stir for 30 seconds. Pour in the soy sauce mixture and then stir in the cornstarch and water and mix until each piece of chicken is coated.

  6. Add the peanuts, remaining scallion and Sichuan pepper oil, stir one last time and serve immediately.
