Boil your potatoes for 10-15 minutes, until fork tender, lay on a baking tray and use a glass to smash them.
Coat with a drizzle of olive oil, salt and pepper and bake in the oven at 180°C for 20 minutes.
Finley chop your onion, herbs and cucumber and set to one side.
To make your dressing combine the whipped feta, Greek yogurt, lemon juice and zest, garlic and salt and pepper.
In a bowl, combine the potatoes, veggies and dressing, mix well and serve!
