Preheat oven to 150 °C (fan 130 °C) / Gas 2.
Line a large baking tray with parchment paper.
In a large bowl, combine oats, pistachios, coconut, pumpkin seeds, salt, cinnamon, and nutmeg.
In a jug, whisk together maple syrup (or honey), olive oil, and vanilla. Pour over the dry mix and stir to coat evenly.
Spread onto the tray and bake for 30–35 minutes, stirring once halfway through.
Remove, add dried fruit, and allow to cool fully — it will crisp as it cools.
Store in a jar for up to 2 weeks.
