Preheat your oven to 400°F (200°C) and line two baking trays with parchment paper.
Cut the potatoes into wedges and boil for about 6-8 minutes until just barely tender. Drain well.
In a large bowl, toss the potatoes with olive oil, salt, pepper, rosemary, breadcrumbs, and Parmigiano until evenly coated.
Spread them evenly on the trays and drizzle a little more olive oil on top.
Bake for 1 hour, switching the trays between the top and bottom racks halfway through.
Broil at the end for an extra crisp finish.
