Mix together 2 cups oats, ½ cup almond or peanut butter, ¼ cup honey or maple syrup, 2 tablespoons softened butter or coconut oil, 1 teaspoon vanilla, ½ teaspoon cinnamon, and a pinch of salt to create the oatmeal base
Press the oatmeal base into a lined pan
Melt ¾ cup chocolate and mix with ¼ cup almond or peanut butter and 1 teaspoon vanilla to create the fudge layer
Pour the fudge layer over the oatmeal base
Refrigerate until set
