Green Goddess Potato Salad
  1. Boil your baby potatoes until fork tender

  2. Preheat oven or air fryer to 190c

  3. On a prepared baking tray, add your potatoes.

  4. Smash your potatoes with a back of a glass.

  5. Add some olive oil, herbs of your choice, salt and pepper and mix well.

  6. Roast in oven for 30-40 minutes until crispy or air fry for 20 minutes

  7. To a blender, add all the dressing ingredients, and blitz until smooth.

  8. You may need to add more water, depending on what consistency you like.

  9. Add your chopped salad, potatoes and chickpeas to a bowl.

  10. Pour in the dressing and mix well.
