Boil your baby potatoes until fork tender
Preheat oven or air fryer to 190c
On a prepared baking tray, add your potatoes.
Smash your potatoes with a back of a glass.
Add some olive oil, herbs of your choice, salt and pepper and mix well.
Roast in oven for 30-40 minutes until crispy or air fry for 20 minutes
To a blender, add all the dressing ingredients, and blitz until smooth.
You may need to add more water, depending on what consistency you like.
Add your chopped salad, potatoes and chickpeas to a bowl.
Pour in the dressing and mix well.
