Make the curry: In a large pot, heat olive oil. Add onion, garlic. Cook for 3-4 minutes until soft.
Add spices ginger, turmeric, curry powder. Let bloom for 30 seconds.
Add broccoli, passata, broth, coconut milk.
Simmer for 20-25 minutes until broccoli is tender, sauce is creamy. Season to taste.
Braise the tofu: In a bowl, mix soy sauce and honey.
In a pan, place tofu slabs in a single layer. Pour sauce over.
Cook on medium heat, flipping occasionally and spooning sauce over, until sauce reduces, tofu becomes glossy and coated.
Serve: Spoon curry over rice. Slice tofu and place on top.
