Homemade Bagels
  1. Mix warm water, sugar, and active dry yeast together and let sit for 5 minutes to activate

  2. Mix flour and salt together

  3. Combine wet and dry ingredients and knead for several minutes until well combined

  4. Cover with towel and let rise in a warm oven with boiling water for 1 hour and 20 minutes until doubled in size

  5. Give dough a quick knead and cut into 8 equal pieces

  6. Shape each piece into a bagel by stretching the dough through the center with your thumbs

  7. Cover shaped bagels with towel and let rest for 10 minutes

  8. Bring a pot of water to boil and add ¼ cup honey

  9. Boil bagels 1 minute on each side

  10. Remove bagels and place on parchment-lined pan

  11. Brush tops with egg white wash

  12. Add desired toppings (soak minced onions in water first to prevent burning)

  13. Bake at 425°F for 15-20 minutes until golden brown

  14. Cool on wire rack for at least 20 minutes before slicing
