Mix flour and salt together
Combine wet and dry ingredients and knead for several minutes until well combined
Cover with towel and let rise in a warm oven with boiling water for 1 hour and 20 minutes until doubled in size
Give dough a quick knead and cut into 8 equal pieces
Shape each piece into a bagel by stretching the dough through the center with your thumbs
Cover shaped bagels with towel and let rest for 10 minutes
Bring a pot of water to boil and add ¼ cup honey
Boil bagels 1 minute on each side
Remove bagels and place on parchment-lined pan
Brush tops with egg white wash
Add desired toppings (soak minced onions in water first to prevent burning)
Bake at 425°F for 15-20 minutes until golden brown
Cool on wire rack for at least 20 minutes before slicing
