Begin by preparing the Brussels sprouts. Trim off the bottoms, then halve each sprout.
Bring a large pot of salted water to a boil. Blanch the Brussels sprouts for 3 minutes.
Immediately transfer the sprouts to ice-cold water to halt the cooking process. Drain and set them on a wire rack to dry completely.
Cut the bacon into small strips. Place them in a cold frying pan over medium-high heat. Stir every 3-4 minutes until the bacon is crispy. Remove from the pan and set aside.
To serve, heat olive oil in a large pan. Add the blanched Brussels sprouts and butter. Cook for 3-4 minutes until they begin to colour. Then, add the cooked bacon, maple syrup, and season with salt. Stir well to combine and heat through.
