Dan-dan (ish) Noodles
  1. For the sauce: Stir together peanut butter, low sodium soy sauce, black vinegar, chili oil, sesame oil, minced garlic, and brown sugar in a bowl until well combined

  2. Add 1 ½ to 2 cups hot pasta water or low sodium chicken broth to the sauce (add 1 tsp chicken bouillon powder if using pasta water)

  3. Brown the ground pork over medium high heat for about 4-5 minutes

  4. Add the finely chopped mushrooms, minced garlic, minced ginger, Shaoxing wine, dark soy sauce, hoisin sauce, and pepper to the pork

  5. Cook the meat mixture until fully combined and cooked through

  6. Cook the spaghetti according to package directions

  7. Toss the cooked pasta with the sauce

  8. Top with the cooked meat mixture, green onions, cilantro, and crushed peanuts or sliced almonds
