Lazy Spanakopita Muffins
  1. Preheat oven to 350°F (175°C) and grease a 12-slot muffin tray.

  2. Heat olive oil, sauté scallions for 1 minute, add spinach, and cook until wilted.

  3. Transfer spinach to paper towels, cool 10 minutes, then squeeze out liquid.

  4. In a large bowl, whisk eggs, olive oil, and buttermilk.

  5. Add flour, baking powder, salt, and nutmeg. Mix until just combined.

  6. Add spinach, dill, feta, and mozzarella.

  7. Divide into muffin cups, top with parmesan, bake 23–25 minutes.

  8. Cool on wire rack. Enjoy warm or room temp.
