Chop sweet potatoes into cubes. Spread in a single layer on a LARGE parchment-lined baking sheet. Spray with olive oil and toss with dry seasonings. Roast for 20 minutes at 425, tossing once half-way through.
While they roast, cook your ground beef. Heat a large skillet over high heat with a mist of oil spray and let it get hot before adding your beef and seasonings. Let the beef sit for a minute to brown before breaking it apart with your meat masher or wooden spoon. Brown the meat for about five minutes until it's cooked through. Add water and scrape off any bits stuck to the pan. Let it cook for another minute with the water and then turn off the heat.
Build bowls: In each serving, add ¾ cup roasted sweet potatoes (125g cooked weight), ¾ cup cooked ground beef (120g), ½ cup cottage cheese (119g), 2 Tbsp avocado (30g), and 2 tsp hot honey drizzle (10g). Enjoy!
