Add 300 ml of warm milk and 80 ml of warm water into a bowl, 8 g of yeast, and 30 g of brown sugar.
Leave it alone and let it bloom for 5 to 10 minutes.
Add 530 g of bread flour, 10 g of salt, and 80 g of softened butter.
Mix in a mixer for about 7 minutes.
Sprinkle down some flour on your work surface and get all of the dough out.
Hand knead the dough by folding it over itself and pushing and pulling.
Put a little bit of olive oil in a bowl, place the dough in, and cover with a shower cap.
Leave this in a warm place to double in size for about an hour.
Punch the dough down and scrape it out onto a clean counter.
Degas the loaf and roll it out into the most even rectangle possible.
Press out any bubbles.
Roll it up into a log.
Place the log in a loaf pan.
Let it rise for a second time.
Put it in the oven.
Bake for 45 minutes in a 375° oven.
