Bloom yeast in water with honey and brown sugar
Add in egg and dry ingredients with hook
Knead until pulls away from sides, with some “whacking” on medium speed
Proof 1 hour in warm, moist microwave.
Punch down and turn out onto floured surface, and gently shape into rectangle. Cut into 8 mini free-form loaves.
Rise another 30 minutes in shade on patio (or other warm place)
Arrange on parchment or nonstick mat
Bake 15 minutes at 375 until slightly browner on top, 180 degrees internal temp.
