Crispy Smashed Potato Salad w/Tater Tots
  1. Preheat oven to 200ºC and bake potato gems for 10 mins to soften. Remove from oven.

  2. Spray the bottom of a flat-bottomed glass with a little olive oil and use to smash all the gems. Season with salt and return to oven for another 30 minutes until crispy.

  3. Mix all other ingredients in a large bowl to make the sauce.

  4. Let potato gems cool for 5 minutes so they stay crispier.

  5. Pour all the gems into the sauce and mix.

  6. Serve immediately! This will eventually get soggy so don't wait too long!
