Preheat oven to 350F. Butter a 9x13" baking dish.
In a skillet over medium high heat, brown the ground sausage in the olive oil, breaking up into tiny pieces with a wooden spatula.
In a large bowl, whisk the eggs, milk, spices, and herbs together. Set aside.
Add the sliced croissants, browned sausage, and grated cheese into the buttered dish. Pour the egg mixture on top and mix so it's all evenly distributed.
Bake for 15-20 minutes, until all eggs are set in the center.
