Stuff your olives with mozzarella cheese or filling of choice
Whisk together ¾ cup flour with ½ cup water and a pinch of salt to make batter with pancake batter thickness, adjusting flour or water as needed
In a separate bowl add ¼ cup plain flour
In a third bowl add breadcrumbs
In a small saucepan bring oil to high heat around 350°F
Using a toothpick or fork, dip olives in flour, then batter, then breadcrumbs
Carefully add olives into the oil about 5 at a time and fry for a few minutes until golden brown
Serve hot with herby lemony aioli or dip of choice
