Fried Stuffed Olives
  1. Stuff your olives with mozzarella cheese or filling of choice

  2. Whisk together ¾ cup flour with ½ cup water and a pinch of salt to make batter with pancake batter thickness, adjusting flour or water as needed

  3. In a separate bowl add ¼ cup plain flour

  4. In a third bowl add breadcrumbs

  5. In a small saucepan bring oil to high heat around 350°F

  6. Using a toothpick or fork, dip olives in flour, then batter, then breadcrumbs

  7. Carefully add olives into the oil about 5 at a time and fry for a few minutes until golden brown

  8. Serve hot with herby lemony aioli or dip of choice
