Lay out the minced chicken on a sheet of baking paper and season it with salt and black pepper.
Sauté the mushrooms with a bit of black pepper and salt until they become fragrant.
Place the sautéed mushrooms on top of the chicken.
Add melted cheese and a sprinkle of mozzarella over the mushrooms.
Fold the baking paper around the chicken to seal in the filling.
In a bowl, whisk the two eggs until they are smooth.
Combine flour, breadcrumbs, paprika, garlic powder, salt, and pepper in another bowl.
Dip each folded chicken piece into the egg mixture, then coat it with the flour-breadcrumb mixture.
Fry the coated chicken pieces for a few minutes on each side until they turn golden brown.
In a separate pan, soften the onions and garlic.
Pour in the tomato sauce and add a little brown sugar, cooking it briefly.
Spread the sauce over the fried chicken pieces and top with mozzarella.
Bake in the oven for 25 minutes, or until the cheese is melted and bubbly.
