Paleo Turkey Stuffed Peppers
  1. Sauté the ground turkey, in olive oil, until cooked over medium heat. Add the spinach and stir until wilted.

  2. Add the rest of the ingredients, except for peppers, and simmer for 20 minutes.

  3. Cut the tops off of each pepper and remove the seeds and stems. Slice each pepper in half, down the middle.

  4. Lay the peppers down on a baking sheet and spoon the turkey mixture into each half.

  5. Bake at 425 F for 25 minutes.
