In a bowl, mix together the flour, sugar, vanilla sugar and baking powder.
Add the chopped cold butter and the egg. Quickly knead the dough, wrap in foil and refrigerate for 1 hour.
Peel the apples and grate them coarsely.
Transfer to a pot, add the lemon juice, sugar/honey, cinnamon and raisins (if using). Cook until the apples are soft and the excess liquid has evaporated.
Line a 20 x 25 cm baking dish with parchment paper.
Grate ¾ of the dough and press it into the bottom of the prepared pan.
Bake at 180°C for 10 minutes.
Spread the apple mixture evenly over the pre-baked crust.
Pour the prepared vanilla pudding over the apples.
Grate the remaining dough over the top.
Bake at 170°C for about 45 minutes, until the crust is nicely browned.
Allow to cool, then dust with powdered sugar.
