Blitz the oats in a blender, not to dust just rough chop them.
Throw peanuts, egg, and butter in there too and blend into a paste.
Mix in sugar substitute, honey, salt, flour, baking powder, soda, and vanilla until it comes together.
Toss in the extra chopped peanuts.
Fridge for 30 min with cling wrap.
Shape into 8 balls, flatten to 1cm, and place onto a lined tray with space between them.
Bake at 180°C for 15 min on the second rack from the bottom.
Leave them on the tray to set up as they cool.
