Ingredients (Pork)
Preheat oven to 350°. Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat the pork with spice rub.
Stir together brown sugar, garlic, and Tabasco. Set aside
Heat oil in skillet over moderately high heat until just beginning to smoke, then brown pork, turning, about 4 minutes total.
Leave pork in skillet if ovenproof or transfer to baking dish. Coat/cover/ with Brown Sugar Mixture and pack it down on the surface of the seared pork
Roast in middle of oven until thermometer inserted diagonally in center of each tenderloin registers 140, Appx 30 - 40 min.
Let pork stand at room temperature for 10 minutes. Temperature of pork will rise to about 155 while standing.
