Cauliflower Chickpea Tacos
  1. Add olive oil to a wide high walled sauce pan and bring it to temp. Then add chickpeas, cauliflower, and spices to the pan. Cook until cauliflower is soft - I added water semi regularly to keep the ingredients from getting too dry or hot.

  2. Once soft, add the honey and hot sauce. Using a potato masher or your spoon, mash the mixture a bit until it's somewhat coherent and some parts are closely to paste consistency, but there's still plenty of bite to it. Remove from heat and add in lime juice.

  3. Line your pan with oil, parchment paper, aluminum, etc. Lay down tortillas and spoon the mixture into them. Add shredded cheese to taste and fold. Protip: another baking sheet on top will keep these bad boys folded throughout the cooking process, and even brown the tops a bit!

  4. Bake at 400 for 10 minutes. Serve with desired toppings or accoutrements!
