Combine all filling ingredients in a bowl and mix well by hand. Reserve some green onion and ginger for garnish.
In a 4-oz ramekin (this recipe makes about 4), alternate layers of pork mixture and wonton wrappers.
Add water until the wonton wrappers are fully submerged.
Steam over medium-high heat for 15 minutes.
Remove immediately, top with green onion and ginger, and enjoy hot. Add chili garlic crunch if you want heat.
